Allegany Camping Treats
Every Columbus Day weekend we head out to Allegany State Park with family and friends to camp and enjoy the beautiful fall colors. This year Erie, our 4 month old puppy, came along which made it even more fun! We had amazing weather. Warm and sunny during the day for "Thunder Rocks" exploring and cool enough in the evening for wonderful campfires.

With 15 people, we always eat really well because we all plan soooo much delicious food. There are always hobo pies for lunch with pizza ingredients and deli meats/cheeses. These get cooked right in the fire with special sandwich makers.

For dinners, since we have refrigerators and gas stoves in our cabins, we had shepherds pie, chili, and lasagna. The lasagna was my contribution with Italian sausage and lots of garden veg, like eggplant and zucchini. What's nice about these dishes is that you assemble them at home so they can just be popped in the oven there.


We of course also had fall inspired desserts, like apple crisp (from Mike's Mom), campfire Reese's Peanut Butter Pumpkin smores, and baked apples. I made the baked apples by coring them, stuffing them with oatmeal, brown sugar, cinnamon, and butter, then wrapping them in foil. The little packages were thrown in the camp fire to roast. It took about 20 minutes to cook them. The kids loved listening to them sizzle, although had little faith that they would be edible. They turned out pretty good but maybe next year I will try them on a grate so they don't get too hot in one spot where they rest on the coals. Campfire cooking is a lot of fun as long as you don't worry too much.
