Happy Halloween -
Deep Red Borscht!
Since I grew beets this year, I was eager to figure out some beet inspired dinners and borscht came to mind. I'm not sure why but beets scare some people. The color is intense but I think they taste great! Earthy and sweet! They are super healthy too!
I was excited to make this soup but there are a ton of recipes out there! I wanted something traditional so I went with a Ukrainian recipe on allrecipe.com that had rave reviews for its authenticity. I decided to leave the sausage out because I really wanted to taste the veg. I have to admit that I didn't follow the directions exactly because it wasn't really my style of cooking. The recipe wanted me to boil all the vegetables in water first, where I instead sauteed them, and then added vegetable stock and diced tomatoes/paste.
It was a tasty and comforting soup, sweet from all the carrots and beets. The texture was nice from the shredded beets, carrots, cabbage, and cute little cubes of potatoes. The dollop of sour cream on top was a perfect accompaniment both in flavor and visually, making the red even more striking.
It was so good that I will now experiment with "borscht". I actually plan on making it again this week but with roasted beets that I will cube up. That's what I love about recipes like this. After you do it once, then you can make it your own!
