Heather's New Recipe for March 2012
I was completely captivated by March's EveryDay with Rachael Ray's "Somewhere Over The Salsa" by Tracey Seaman. The Photography by Kenji Toma beckoned me to return to pages 92-95 to put the ingredients on my grocery list for a few weeks. March was unseasonably warm so making huge bowls of colorful salsa made sense even if my longing for summer was unreasonable. It may sound crazy but today I'm mourning the loss of this perfection because I woke up to snow and brown magnolias. I'm really trying not to be heartbroken by the skeletons of my favorite spring flower.
Oh well... life must go on and I'm seriously thinking about making these fruity color coordinated salsas again soon to pick up our spirits!
The first one I made was Sweet & Spicy Double-Blueberry Salsa. So good! The mix of chewy dried blueberries with the fresh, walnuts, celery, and hot peppers was strangely delicious. Just beware, blueberries roll off chips! Although the article had tons of wonderful "Make it a Meal" options, we enjoyed them all with chips like savory desserts.
Spicy Orange and Mango Salsa was also wonderful and beautiful from all of the orange fruit including an orange pepper. We love mixing sweet with salty so these were all hits.
We didn't end up grilling the Grilled Pineapple-Corn Salsa because we weren't ready to open up our grill just yet, but it was still delicious with fresh pineapple and thawed frozen corn. We love fresh pineapple so much that our mouths went a little numb from the natural enzymes/acid.
The last fruity salsa I made for us was Roasted Beet & Watermelon. This recipe didn't have any heat but I chopped up two jalapenos anyway. Salsa needs heat in our house! A range of reds made this striking to look at but also dangerous to eat on the couch. We ran out of chips so an amazing lunch was made with the leftovers by mixing it with farrow and feta the next day!
We eat a lot of salsa in the summer because of the overabundance of garden veggies, so these recipes were nice variations to enjoy while longing for what's to come!
