Chicken Makhani

Our love for the lunch buffet at Thali of India is no secret. Ever since I took a job closer to home in Brockport, I've missed random lunch trips to the Henrietta spot. It's now a rare Saturday that it works out for us to enjoy the great curry.

When we are at the buffet, Heather tends to take small samples of many of the different options available. Not me! I usually head straight for the wonderfully orange Chicken Makhani, always positioned at the far end of the buffet line. Because our trips have become so rare, I wanted to try my hand at making this curry at home.

After googling around a bit I ended up selecting a recipe at allrecipes.com. There are lots of ingredients but only three cooking steps! It sounded relatively painless.

Pittsburgh Sandwich

We've made several trips to the Sticky Lips on Jefferson Road in Rochester since it opened. Their beer selection is great and there's often a time when we are in the mood for some nice, big plates of barbecue. One dish that I've gravitated to on their menu is the Pittsburgh sandwich. It features pulled pork, coleslaw, and french fries all stuffed between two pieces of bread. It's strangely reminiscent of Rochester's famous garbage plates, but as the name implies, it comes from Pittsburgh.

The Pittsburgh origin is particularly interesting to me because my sister moved down there with her husband so we've visited several times. On our most recent trip we actually had a brief conversation about the sandwich, confirming that it is a thing down there, but we didn't actually go to the source. Upon returning, some research was in order and I found the Primanti Brothers Wikipedia page.

Pork and Beans

Another Christmas past and another set of new cookbooks received. We each got each other a new book this year! Heather picked out Michael Symon's Carnivore for me. Subtitled 120 recipes for meat lovers, the book includes a ton of great insights into cooking meat. It's divided into sections based on the type of animal: beef, pork, lamb & goat, poultry, game, and a bonus section for sides. I can't wait to really dig into the book and start learning about how to properly cook all of these unique meats. A lot of the recipes will require a trip to a butcher that goes beyond what's available in a grocery store, but there are still several options that use cuts you can get almost anywhere.

Our gluten free January was also a limiting factor in my recipe selection for the month but I ended up deciding on his Pork & Beans recipe. It sounded like a relatively straightforward one pot wonder that I could pull off and all I had to do was leave out the bread crumb topping to make it gluten free. It also involved a ton of bacon, sausage, and a ham hock. Pork heaven!

Mexican Eggs in Purgatory

In the days leading up to Thanksgiving I was perusing my website subscriptions and I stumbled on an article at Food & Wine's site called Easy Holiday Brunch Recipes. Making brunch for Heather and I on the day after the holiday sounded like a fun idea and the Mexican Eggs in Purgatory recipe jumped out at me.

It sounded simple enough, essentially making a homemade green salsa, cooking some eggs right inside it, and putting some cheese on top. Finding fresh tomatillos at the grocery store ended up being a lost cause so we nervously committed to some canned ones instead. I also decided to use feta instead of cotija cheese because we conveniently already had some. Thankfully, we had some frozen jalapeno peppers left over from the garden so I got to use those as the first snow started falling on our house.

Tomato Saffron Soup!

So it's the day before Thanksgiving and after a wonderful walk with my dog, I find it funny that I'm writing about "clean food" when so much planning goes into the decadence of tomorrow. Personally, I've been feeling run down and can't help but to look at my diet and re-energize my system with good food.

I received a cookbook called Clean Start by Terry Walters as a gift and I just love it. It's full of simple "clean food" recipes with interesting combinations of nutritionally packed ingredients. It truly makes you feel like you are doing good for your body and the environment by focusing on eating locally and seasonally, dividing the book up into Spring, Summer, Fall, and Winter. Its such a beautiful book and I recommend it to anyone looking for tasty ways to increase their vegetable intake. I follow Terry Walters on Twitter and Instagram and enjoy her enthusiasm for healthy, happy living.

Eggplant and Goat-Cheese Sandwiches with Tomato Tarragon Sauce

I decided for my September recipe I would make something special using the beautiful eggplant from our garden and inspiration from my new addiction, Pinterest.

When I saw this on my feed, I knew I had to to make this twist on eggplant parm with intriguing flavors of tarragon and goat cheese. I pretty much followed the recipe except for the addition of the yellow squash, also from the garden. The recipe was different but not overloaded with ingredients, which I appreciated.

Mike's Recipe, September 2012 - Breakfast!
I know. I know. I seem to pick Bobby Flay recipes a lot for these things. What can I say. I'm seriously drawn to his style of cooking. This month, I had the urge to make a breakfast! It seemed like it would be a lot of fun to get up in the morning on a weekend, and put together a nice meal. From there, my head went to breakfast sandwiches. Fast food breakfast sandwiches are extremely popular. They are always really flavorful. As with most fast food, we do our best to stay away. Given that, I picked out Bobby Flay's Grilled Sausage and Egg Breakfast Sandwich.

It's a really interesting and simple recipe. Bagel for the 'bread'. Simply done scrambled eggs and homemade sausage goes in the middle. Homemade sausage?! Sounds scary, but the way he suggests doing it is just like making burgers! We picked up some ground pork at Wegmans all ready to go. I took 8 ounces of it (we halved the recipe for only two sandwiches) and froze the rest. Along with the 8 ounces in a bowl, I added most of the spices from the recipe. We couldn't find any chile de arbol at Wegmans. Then I mashed everything together with my hands and formed two patties and set them aside.

Heather's Recipe, July 2012 - Dr. Weil
Dr. Weil is a natural health guru that has written many books on healthy living. I enjoy his recipes immensely because they are simple, clean, and delicious. His banana bread is one of my favorites with 3-4 bananas and no eggs. I make it a lot in the fall and winter as a nutritious treat to take to work when I have over-ripe bananas. I decided to experiment with a few other recipes of his from his book Eating Well for Optimum Health and loved them all.

Mike's Recipe, July 2012 - BBQ Sauce
When I started thinking about my July recipe, a homemade BBQ sauce came to mind. At first I wrote it off as too simple and boring. It's always tempting to find some difficult and fancy dish for these posts but sometimes I need to step back and ask myself, what would I have fun making?

Too many times have I heard that you should never purchase a BBQ sauce because they are so easy to make. My problem with that sentiment is that there are so many good sauces to buy out there! One of our favorites comes from Dinosaur Bar-B-Que. It's readily available at almost every Wegmans and it's really good! Another sauce I've had that I loved came from Colorado brewery, Oskar Blues. Their Old Chub Hot Sauce was really good and is just such a great idea. We love Old Chub so it isn't a hard sell.

I used that inspiration to begin my web search for a recipe to run with. I found this. I've never heard of BBQPitBoys.com before but the recipe includes both jalapenos and beer so it caught my eye. I was somewhat hesitant because it uses so much ketchup. It gives the recipe a bit of a non-homemade feeling. I decided to go with it though and I wasn't disappointed.

Mike's Recipe, May 2012 - Burgers!
We had a pretty warm May here in upstate New York. Our deck isn't quite ready to go for the summer but we didn't let that stop us from grilling. Burgers are a point of some stress in our house. Heather is convinced that she can't make a good burger and I just don't understand it. A burger is my ultimate comfort food and I love eating them any time she makes them. Her hesitancy to do so always makes me sad. Sounds like a perfect candidate to add to my list of go-to meals.

This wasn't the first time I've attempted to make burgers. I remember a time where I was cooking dinner for myself back in one of our first apartments. Heather wasn't home and I wanted to make two quick burgers. I threw them in a pan on the stove on high heat. The result? A smoke filled kitchen and two well done burgers.
